BEEF STIR-FRY IN SWEET CHILI SAUCE: Dawn of the Multi-cookers and Instant Pot

Lo and behold this new kitchen wonder called Instant Pot multi-cookers. I mean seriously, what other excuses can we have now for not cooking easy, fast and healthy?

I was intimidated at first with its digital multi-cooking functionalities but I used to cook with the old-fashioned pressure cooker so my transition from the old to the new technology wasn’t too painful but exciting. For new users, please make sure you read the manual first for proper use and safety.

I made this dish on a lazy weekend and luckily I had most of the ingredients and there wasn’t a lot needed anyway. And by using Instant Pot, it cut my cooking time to only about 35 minutes. All I had to do was prepare the ingredients, combine everything in the pot, then voila! Let Instant Pot do all the cooking. 

This was a quick and easy weekend meal!

Total Servings: 8 serving portions
Diet Type: General, Gluten Free, Keto (use homemade sauce, see recipe below)

Ingredients —

* Beef cuts (sirloin, tenderloin, flank steak, ribeye) – 2 lbs.
* Garlic, minced – 3 tbsp.
* GF Soy sauce – ¼ cup
* Seasoning: Salt-1 tbsp, Pepper-2 tsp, Onion powder-1 tbsp, Thyme-2 tsp.
* Sweet chili sauce (store brand for General Diet) – 1.5 cups

Optional —
* Sun-dried tomato – 1 cup
* Red chilies, dried – ¼ cup
Preparations & Cooking —

1. Cut the beef into strips. Prepare all other ingredients.

2. Combine all the ingredients in the Instant Pot and set it to “Pressure Cooking.”

3. Once done, transfer to a plate, serve and enjoy!

4. TIPS: If using regular soy sauce, cut the salt to 2 tsp, since GF soy sauce is not that salty. For Keto diet, use homemade sauce; recipe below.

Ingredients —

* Stevia  – 6 tsp.
* Distilled/white vinegar – 2 tbsp.
* Water – 2 cups
* Cornstarch (3 tbsp) mixed in water (3 tbsp)
* Hot sauce – 2 tsp.
* Dried red chili flakes – 2 tsp.

Preparations & Cooking —

1. In small saucepan, combine all ingredients and bring to a boil.

2. Adjust the taste to your liking, add sugar or vinegar or hot sauce if desired.

3. Use for the above beef stir-fry recipe.
